Stained Glass Christmas Cookies
Cookie Dough
  • 2¾ cup(s) all-purpose flour
  • ¼ teaspoon(s) baking soda
  • ¼ teaspoon(s) salt
  • 1 cup(s) (2 sticks) butter (no substitutions), softened
  • ¾ cup(s) granulated sugar
  • 1 large egg
  • 1 teaspoon(s) vanilla extract
  • 1 bag(s) (6.25-ounce) colorful hard candy┬ásuch as Jolly Ranchers or LifeSavers
  1. Divide dough into 3 pieces, flatten into a disk and wrap each disk in plastic wrap.
  2. Refrigerate at least 2 hours until firm enough to roll.
  3. While dough is chilling lightly crush candy into small pieces about the size of coarsely chopped nuts. Do not to crush until powdery.
  4. Preheat oven to 350 degrees F.
  5. Prepare cookie sheet lined with parchment paper.
  6. Roll out the chilled dough to around ⅛ inch thick and cut out shapes using a Christmas cookie cutter. If you don't have the shape you like, use a sharp paring knife.
  7. Remove and refrigerate trimmings and cutout centers.
  8. Place 1 inch apart on prepared cookie sheet.
  9. Bake cookies 7 minutes.
  10. Remove cookie sheet from oven; fill each cookie's center with ½ teaspoon crushed candy.
  11. Return to oven and bake 3 to 4 minutes longer or until cookies are lightly browned and candy is melted.
  12. Cool cookies on cookie sheet on wire rack.
  13. Repeat with remaining dough, trimmings, and candy.
