White Chocolate Cashew Cookies
1/2 c. Butter, softened
3/4 c Granulated Sugar
1 tsp Vanilla Extract
1/2 tsp Ground Clove
1/4 tsp Ground Cardamom
1 1/2 c. AP Flour
2 oz. White chocolate, coarsely chopped
1/2 c. Cashews, chopped
Cream butter and sugar until light and fluffy. Add egg and incorporate completely. Next, add vanilla, clove and cardamom. Mix thoroughly. Stir in all the flour and then throw in the cashews and chocolate.
Drop by the spoonfuls onto a parchment lined cookie sheet. Bake in a 375 degree oven for 10-13 minutes or until edges are browned.
Cool on a wire rack and enjoy with some milk while wrapped up in a fleece blanket and with feet securely snug in fuzzy slippers. This is the best way to enjoy every cookie, in fact. Try it out sometime (…you know, once the kids are in bed and the hubby is out of your hair)
These cookies are crispy on the edges and chewy in the middle. They’re a good go-to cookie when you’re looking for something that’s sinful, but not as heavy as a chocolate cookie.
