Pizzelle Cookies

I can’t believe it! There is actually a cookie I’ve never heard of!!!

So when I ran across a description of this cookie on a web site, I just had to learn more!

Pizzelles are interesting and versatile cookies.

A thin, crispy, golden brown Italian cookie made from flour, eggs, sugar, butter and flavoring, such as vanilla, anise or lemon zest. It is cooked in a special pizzelle iron, similar to a waffle iron, that has a decorative pattern, typically a snowflake, which is impressed into the cookie. The cookie can be sprinkled with powdered sugar. Unsugared when it is still soft, it can be rolled up into a cone for ice cream.



I found a recipe that seems to be pretty universal. I will have to try these and see how they turn out. Apparently, small changes such as types of oil used, make a big difference in the taste of these cookies. So the possibilities are endless.
