I’m a big fan of a ginger cookies that have a little kick to them, so when I found this recipe for Mexican Chocolate Chili Cookies, I knew it would be a good recipe for the collection. If you’ve never experienced a “spicy” cookie, this is a great one to start with. Anyone with even a little culinary curiosity should give them a try. They’re simple to make and while the idea of a chili pepper on the cookie might look a bit intimidating, I promise, the flavor is a wonderful compliment — warming, but not overpowering. Likewise, with any good chocolate cookie, a glass of milk is the perfect accompaniment as milk has a natural cooling effect. 🙂

  • 1 egg
  • 1/4 teaspoon ancho chili powder
  • 1 1/4 cups all purpose flour
