Baking cookies with whole grain flours

Baking cookies with whole grain flour can be a challenge. But in our increasingly healthy conscious society, it’s worth figuring out how to do it, especially with diabetes on the rise.

I should know, I just found out that I am pre-diabetic. I’ve done a major diet overhaul, and am now focusing on redoing some of my cookie recipes so that my body is better able to handle them, and will be writing a recipe book based on my findings. Whole grains may be just the beginning, but they are a major consideration, as they can change your cookie entirely.

Here are a few whole grain cookie recipes I’ve found on the net. They look yummy. In fact, this entire web site is the best find I’ve had all year, considering my new dietary needs!

If you are trying to stay away from the refined sugar as well, simply use the conversions I gave on a previous blog post on sugar substitutes, to substitute natural sugars like honey and Agave for the white stuff. I have a new found love for Agave because I found out that your body processes it as a complex carbohydrate instead of a simple sugar, AND it’s really yummy! Have I died and gone to heaven???

I used to think along these same lines until I started reading the book “Wheat Belly Cookbook, by William Davis, MD. Modern wheat is a source of health problems. Don’t take my word on it. Get of copy and read it.
