Andes Chocolate Mints Cookies

Doesn’t that photo just tell you everything about the cookie? I mean… yum!

These Andes Chocolate Mints Cookies were so delicious! I baked them for my family. It’s been a while since I’ve done a mint cookie, and they were starting to go through withdrawals. So I finally caved.

Andes Chocolate Mints Cookies

Ingredients
  • ¾ cup butter
  • 1½ cups packed brown sugar
  • 2 tablespoons water
  • 12 ounces semi-sweet chocolate chips (2 cups)
  • 2 large eggs
  • 2½ cups AP flour
  • ½ teaspoon salt
  • 1¼ teaspoons baking soda
  • Andes mints candies, broken in half
  • Heat oven to 350°F.
Instructions
  1. Over low heat, combine butter, sugar and water. Heat until melted and add chocolate chips until partly melted. Remove from heat and stir. Pour into large mixing bowl. Let stand 10 minutes to cool slightly.
  2. Beat in eggs one at a time on high speed. Reduce mixer to low speed and add flour, salt and baking soda. Beat until well-blended.
  3. Chill one hour.
  4. Roll into balls, place two inches apart on parchment paper-lined baking sheets. Bake for 10 minutes.
  5. Place an Andes Mint half on top after taking them out from the oven. Allow to melt slightly and spread with a spoon.
These are a fabulously soft cookie. They crumble nicely and really leave you wanting more. I even put a little extra chocolate on top of each cookie. Not much, but enough to call it extra. Everyone loved it. And I do mean everyone!

A.k.a: Bug

We couldn’t finish the whole batch (thank goodness!), so we left them on the counter top. Bad choice.

Morning came, and we found chocolate paw prints all over the comforter we were sleeping under. And there lay the cat between us, sleeping and happy as a clam, chocolate all over his nose. Yes, he’s so lazy he can’t even clean his own nose. Lazy, lazy, lazy.

Well, needless to say, we made it a point to disturb his lovely little nap. He was quickly shewed off the bed, only to realize he still had chocolate on his paws and was now tracking it all over the house as we chased him.

Yep, never a dull moment.

Point of this little story: If your cat likes mint, hide these….well!

    Mmmm, I made these last year for a cookie exchange and they were a hit. I love Andes Mints to begin with but these were especially good and the mintiness suited the holiday season.
